Carrot Halwa
Ingredients
  • 4 cups Carrots (finely grated)
  • 2 cups Half and Half (heated)
  • 4 tbsps Ghee (melted)
  • ½ cup Sugar (or to taste)
  • ½ tsp Ground cardamom
  • 12 Golden raisins
  • 10 Raw cashews (chopped)
  • 10 Raw almonds (chopped)
  • 10 unsalted pistachios (chopped)
Instructions
  1. Peel and grate carrots, enough to make 4 cups.
  2. In a wide, deep frypan, add ghee on medium heat.
  3. Add carrots and sauté, stirring continuously until cooked (about 15 minutes).
  4. Add half and half, stir and simmer on low heat until all the moisture has evaporated.
  5. Add sugar, stir until completely absorbed and looks dry.
  6. Add cardamom, raisins and some of the nuts, mix well and remove from heat.
  7. Garnish with the remaining nuts.
  8. Note: replace half and half with 4 cups milk, boiled and slightly thickened. Also can add ½ C mawa along with milk for creamy texture.
